We harvest these pinot grapes a bit earlier than other lots to retain bright acidic energy. Berry clusters are hand sorted before crushing and fermenting. During fermentation, 20% of lots experience whole cluster fermentation to add complexity. New French oak is kept to a low percentage so that the flavor retains focus on our estate grown fruit.
