Basque + Txakoli = Baskoli, Hiruzta Winery’s best representation of txakoli’s
terroir, culture and history in a glass. Hiruzta Winery, derived from hiruren uzta
meaning ‘three-person harvest,’ has been the dream of a father and his two
sons—Asensio, Txarli and Angel Reklade—to create their own Txakoli wineries in
one of the most beautiful locations in Basque Country. Txakoli is a wine produced
from native grapes in Hondarribia; a tradition dating back to at least the 15th
century.                                                                                                                                       Grapes are harvested and transported in small crates. ey are first destemmed and
crushed followed by a soft pressing. e juice then undergoes a cold static settling
of the must at 8 to 10o C and stored in tanks at a low temperature to maintain the
naturally occurring carbonation. e wine undergoes a gentle clarification and
stabilization at a low temperature before bottling.                                                                   The finished wine is clean and bright with a pale yellow color with greenish glints
against the light. Pouring reveals the presence of tiny carbonation bubbles typically
associated with this type of txakoli. Intense aromas of white pear, apple, citrus
fruits on the nose, all accentuated by the subtle effervescence of natural carbon
dioxide gas. Balanced and fresh in the mouth, it has quite a crisp taste with
well-integrated acidity. e palate is refreshing with flavors of citrus and tropical
